The Buddha Bowl! So what exactly is a Buddha Bowl? According to Wikipedia’s definition a buddha bowl is “a hearty, filling dish made of various greens, raw or roasted veggies, beans and a healthy grain like quinoa or brown rice. Sometimes it will also include toppings like nuts, seeds and dressings for added texture and flavor.” To add to the fun of making a buddha bowl, get yourself a really cool bamboo bowl. In this recipe, We are omitting the grains so we suppose in the true definition this is not an authentic buddha bowl. It’s ok though, experiment, try all kinds of things in your bowl, just keep it simple and clean. Also omitting the grains and using plain tofu makes this meal gluten-free.
Ingredients:
A really cool bamboo bowl – optional of course
A large handful of kale
one small seedless cucumber
1/2 cup garbanzo beans rinsed – used this instead of the grains – if you want do quinoa or forbidden black rice – make 1/2 cup
1/2- 1 cup cooked tofu (plain to keep it gluten-free) – try Trader Joe’s siracha baked tofu – we promise you will like it. If you refuse to add tofu, use baked or sautéed chicken pieces instead.
1/2 ripe avocado
2 tablespoonful avocado oil- feel free to substitute EVOO
1/2 cup shelled. cooked edamame
sea salt and coarse black pepper to taste
juice from 1/2 a lemon
1 tablespoonful sesame oil
1 tablespoonful soy sauce – we use Tamari
1 teaspoon minced ginger – again Trader Joes and other retailers have these awesome cubed spices in freezer section – use 1 cube of the ginger here
Preparation:
Heat 1 tablespoon avocado oil in a sauce pan on medium-medium high heat. Add Diced Tofu pieces and saute until crispy. If you do not have a lot of time just skip the sauté, dice it up and add to the bowl
Rip up your kale in the bowl, getting rid of any large stems and massage 1 tablespoonful avocado oil into it for a couple of minutes. This softens the kale up so its easier to chew.
To the bowl add the edamame, sliced cucumber, diced avocado, and the rinsed and dried garbanzo beans
Once Tofu is done sautéing add it to the bowl
To make the dressing:
Put 1 cube ginger (or 1 teaspoonful freshly minced ginger) in a small bowl and let come to room temperature. Smash it into bowl. Mix in the Tamari, sesame oil and lemon juice and stir well.
Add your dressing to the bowl along with some sea salt and coarse pepper to taste. Toss well.
